The First Taste is With the Eyes: Studies show presentation is a key ingredient in elevating the taste of food

Studies show presentation is a key ingredient in elevating the taste of food.

They say the first taste is with the eyes. But what does this mean?

Imagine awaiting a meal at the best restaurant in your city. Crisp white linens, fresh flowers, soft music, and delicious scents. The server arrives and elegantly presents you with your meal. But looking down, all you see is a slab of steak carelessly slapped onto a white plate, streaks of juice dirtying the plate, and a few baby potatoes rolling around. Uninspired, and frankly more than a bit disappointing.

But why does disappointment arise before the first bite? The flavor of the steak might be absolutely divine, the creaminess of the potatoes, next level. And yet, at this point we might be tempted to whip out our phone to post a photo alongside a 1-star review, even before the first taste.

Why? It’s because presentation matters.

The thoughtful consideration of how the food is arranged, adds enjoyment to the diner’s experience in an unexpected way. The food is, objectively, identical. But the experience of taste can be improved through presentation alone, without changing a single ingredient.

Scientific Studies Confirm Presentation Enhances Taste

In this scientific research study, diners were randomly provided the same meal, either presented beautifully, or presented plainly, and asked to rate the taste of the food. Subjects who ate the beautifully plated food said they enjoyed the food more. People also use visual cues to also determine how refreshing a drink is expected to be. Interestingly, diners expect a clear beverage to be more refreshing than a colored one.
